What's the history behind hot chocolate?
The history of hot chocolate dates back more than 3,000 years to Ancient Mesoamerica, where cacao was enjoyed as a bitter ceremonial drink. Over time, it travelled to Europe, became sweeter and creamier, and eventually evolved into the comforting hot chocolate we know and love today.
The Sacred Origins of Cacao
Cacao trees first grew in the tropical rainforests of Ancient Mesoamerica, where the beans were considered a gift from the gods.
The Aztec and Mayan tribes wove cacao into their daily and spiritual lives. It appeared in sacred ceremonies, symbolised life and fertility, and was served to rulers and warriors as a frothy, bitter, spiced drink called xocoatl (sho-KWA-til).
For centuries, cacao remained a sacred and powerful substance. But when it reached Europe in the 16th century, it was transformed. Bitter became sweet, ritual became pleasure, and a sacred elixir became the comforting cup of hot chocolate we know and love today.

It all began with our Original Chocolate. Ryan, already an avid hot chocolate drinker, found cacao familiar from his years in the speciality coffee world, as both ingredients follow similar processing steps.
We Dutch-process our cocoa, which alkalises the beans to create a smoother, richer and slightly sweeter profile. This gives our drinking chocolate its signature velvety and comforting character.
What's the Difference Between Cacao & Cocoa?
Cacao refers to raw, unroasted beans, while cocoa comes from the same harvested bean but is roasted at higher temperatures, which develops a sweeter flavour profile.
Understanding this difference helps explain why drinking chocolate tastes the way it does.
