Blendsmiths Masala Chai Ice Cream

Creamy. Spiced. No churn. Just magic.

Here’s something bold and unexpected: a no-churn ice cream that brings the deep, warming spices of Masala Chai into a silky, frozen dessert. Think creamy comfort with a hint of heat, packed with aromatic depth and absolutely no ice cream maker required.

This recipe takes inspiration from the traditional Indian masala chai with black tea, cardamom, ginger, cinnamon, and cloves and gives it a cool, modern twist. It’s the kind of dessert that surprises you: rich and fragrant, with just the right balance of sweet and spice.

Masala Chai Ice Cream

Spice Milk Base

You’ll need:

  • 200ml whole milk
  • 2 tsp Blendsmiths Masala Chai Blend
  • 1 inch piece fresh ginger, chopped
  • 1 cinnamon stick
  • 1 bay leaf
  • 6 cardamom pods, crushed
  • 4 cloves, crushed
  • ½ tsp fennel seeds, crushed
  • ½ tsp black peppercorns, crushed
  • 3 black tea bags
Creamy Base

You’ll need:

  • 600ml double cream
  • 1 tsp vanilla extract
  • 1 x 395g tin sweetened condensed milk (use just 300g if you like it less sweet)
  • A pinch of salt
  • Ground cinnamon, for dusting

Method:

  1. Infuse the milk: In a small saucepan, add the whole milk along with the Masala Chai Blend, fresh ginger, cinnamon stick, bay leaf, crushed cardamom, cloves, fennel, black pepper, and tea bags. Slowly bring to a gentle boil, then remove from heat. Cover and steep for 1 hour.
  2. Strain: Once infused, strain the milk through a fine sieve and let it cool completely.
  3. Whip it up: In a large mixing bowl, combine the cooled spiced milk with the double cream, vanilla extract, and a pinch of salt. Whip until soft peaks form.
  4. Sweeten and fold: In a separate bowl, pour in the condensed milk. If you prefer less sweetness, use 300g. Gently fold in the whipped cream mixture until combined.
  5. Freeze: Pour the mixture into a container, smooth the top, and dust with ground cinnamon. Cover and freeze overnight.

To serve: Let the ice cream sit for 5–10 minutes before scooping. Brilliant on its own, but even better with crumbled biscuits, warm brownies, or a shot of espresso for an instant chai affogato. Our favourite pairing? A slice of Pumpkin Spice Pie.
